My brother and I (he left, me right) are awful wine and beer snobs, but also amateur chefs. Before Saturday's Elite XC we put together a bangin' set of wings from a recipe I thought I'd share with you folks so you can cook these at your UFC/EXC party:
1 cup Uncle Brutha's Fire Sauce no. 10 or another good hot sauce
1 stick unsalted butter, cut into 8 pieces
1/4 cup vinegar
a bunch of peanut oil
- In a large pot, pour in the peanut oil so that it's about 2 inches high.
- Put on high heat until the oil reaches 375 degrees and keep it at that temperature
-Meanwhile, pour the hot sauce and vinegar in a small pot and heat to a soft boil. Remove from heat and whisk in the butter until it's all melted. You should taste the mixture to see if it needs any salt (that depends on what hot sauce you're using. I didn't need any salt).
- Using tongs, put the wings into the oil and cook until done, about 5 minutes. It should be crispy on the outside.
- Remove from oil with tongs and put in a serving bowl. Pour sauce over the wings and mix up so that they are all covered.
The trick is to also make sure you have appropriate hot sauce. I know of a specialty store in my area, maybe there's one in your's. Also, the beer present in front of the wings is Bell's Winter White ale. This is similar to Blue Moon only it's actually good.
MMA. Kimbo Slice. Wings. Good beer. It doesn't get a whole lot better than that.
